Symply Potato Patties
Ok, guys. Thanksgiving was 2 days ago. Yesterday my husband decided it was time to freeze the leftover turkey and greens and get rid of anything else he felt “we” didn’t need to be eating for the next few days. Like, who does that? The day AFTER Thanksgiving, bruh? THE DAY AFTER?
I'll admit to being a bit perturbed when he broke the news to me (I was at work). I’m sure he did his deed while I was gone symply because he didn’t want to hear my mouth.
So, yeah. I wasn’t happy about it…but after I’d eaten my second HUGE plate of food in one day...I realized he was saving me from myself.
I was truly making myself sick with all of that heavy food. Like, for real. My back was cramping and I was so sluggish I just wanted to go home and sleep.
When I woke up this morning I realized he’d left my beautiful mashed potatoes and my macaroni and cheese alone. There is a God.
I decided to experiment...again...and as my dad sat at my kitchen table cracking jokes, I made these Symply Potato Patties with leftover mashed potatoes. As I was throwing random ingredients into the bowl, I said aloud, “Daddy, these things better be good because, if they aren’t, I’ve just wasted a bunch of beautiful mashed potatoes.”
“Yeah, baby.” My daddy agreed, “Those mashed potatoes were delicious. It’d be a shame if you mess them up.”
I didn’t mess them up. Daddy loved them so much he ate three, or four. I lose count.
Woo Hoo! These babies are DADDY APPROVED.
I made them up as I went so I pray I can recreate them again in the future.
As I’ve said before...I’m a country girl. I don’t measure anything...I just add ingredients until a voice in my spirit tells me to stop.
I’d like to think that voice belongs to my Granny.
”That’s enough, girl!”
If you’d like to take a stab at making these potato patties...it’s really symple.
Symply Potato Patties
Leftover mashed potatoes * Mozzarella/Parmesan shredded cheese blend
Egg * Bread Crumbs * Vegetable oil
Heat vegetable oil in a large skillet
Mix egg, cheese, and bread crumbs with a spoon until potato mixture is thick and easily formed into patties. The amount of eggs and bread crumbs really depends on how much potatoes you have left over. I’d start with one egg and gradually add more bread crumbs if needed.
Form into patties and coat with bread crumbs.
Fry in skillet until crisp and golden on both sides
Drain on a paper towel and serve immediately.
*note: You can use whatever kind of cheese you want. I just used what was available. My mashed potatoes were actually boiled with green onion so feel free to add whatever ingredients strike your fancy.
You’ll also notice I did’t add any seasonings. Your mashed potatoes should already be seasoned. If not, feel free to add seasonings of your choice.
